Sausage Spinach Frittata
1/3 cup Italian sausage, skinned and fried ¼ bunch spinach, cleaned 1 stem green onion ½ teaspoon basil ½ teaspoon garlic powder ½ teaspoon Italian seasoning ½ cup grated cheddar cheese 1 cup grated Swiss cheese ¼ bunch spinach, cleaned Tiny cubes of cream cheese 8 eggs ½ cup half and half
Layer all ingredients (except for the eggs and half and half), in a greased quiche dish in the order they appear. Cover and refrigerate overnight. Before baking, preheat oven 350 degrees. Beat 8 eggs and ½ cup of half and half. Pour over top of the layered contents of quiche pan. Bake at 350 degrees 25-30 minutes or until “set” DO NOT OVERBAKE! Keep warm at 200 degrees until ready to serve. Serves 8.
